Huangchao Paidang, a new culinary destination, has opened in Beijing's Sanlitun area with a focus on authentic crayfish from Qianjiang, Hubei province.

Known as the hometown of Chinese crayfish, Qianjiang is a nationally recognized geographical indication region, and its signature delicacy is now available to the capital's diners, adding to the city's late-night food landscape.

Crayfish has long held a prominent place in China's nighttime dining culture, valued for its bold flavors and varied preparations, from spicy and garlicky to braised and steamed. Huangchao Paidang sources its crayfish directly from Qianjiang's core area, where the "Four Seasons Fresh" aquaculture technique ensures a consistent, high-quality supply throughout the year.

Delivered live to Beijing each day, the crayfish are prepared using traditional methods. Cooking is conducted over high heat with careful timing to strike a balance between tenderness and flavor, allowing sauces to seep into the tiny spaces between shell and meat for a layered, satisfying taste.
